serves 6
Ingredients
1.5kg Maris Piper Potatoes
2 tbsp olive oil
Handful of rosemary, finely chopped
100g Dorset Nduja, crumbled
Half a lemon
Salt
Method:
STEP 1
Peel and cut the potatoes into quarters and add to a large saucepan of salted water. Bring to the boil and blanch the potatoes for ten minutes or until slightly tender.
STEP 2
While the potatoes parboil, pour about 100ml of olive oil into a large baking tray and place into the oven for 5 minutes to heat up.
STEP 3
Once the potatoes are ready, drain and allow to steam dry for a minute, then pour into the hot roasting tray, season with salt and place into the oven to roast for 45 mins.
STEP 4
Remove the potatoes and add the finely chop rosemary with the Nduja. Mix Will and roast for another 5 mintues until the potatoes are crisps and the Nduja has melted.
