A keto diet explained
The term keto, or ketogenic, refers to a low-carb, high-fat, and protein rich diet that aims to improve energy levels, mental clarity and fat loss by putting your body in a state of ketosis.
Ketosis is a metabolic state that occurs when your body burns fat for energy instead of glucose. In simple terms, to achieve ketosis, you must limit the amount of carbohydrates available for your body to burn for energy - forcing it to burn fats instead to make its fuel.
Some people following a keto diet experience less feelings of hunger and a better ability to retain muscle.
In recent years we have encountered many people opting to consume our cured meats as part of their ketogenic journey. Sticking to a daily limit of less than 50g of carbohydrates per day, or less if consuming some sugars too.
In general, cured meats such as bacon, salami, pepperoni are suitable to enjoy, however you do need to be mindful of some producers who add complex sugars and starches or fillers.
The Real Cure Cured Meat
We use a small amount of sugar in some of our cures as this is a necessary part of a dry curing process for some products such as chorizo. Our Hartgrove Coppa and Dorset Bresaola are made by rubbing a dry cure on the outer of the muscle. These are however washed before dry-aging them. Most of the traces of sugar are further consumed by the good bacteria we add to our mixtures, which are used to inhibit any chance of bad bacteria growing in their place.
Our Fennel and White Pepper Salami for example contains just 1.1g of carbohydrates and 0.6g or less of sugars per 100g, so you could safely snack on our sliced or whole pieces of salami and happily have plenty of daily allowance left for your other foods.
One of our most popular keto diet friendly products is our Beef Snacking Salami. As the name suggests it comes in handy snack sized sticks, great for eating on the go.
You can also snack on our Black Truffle Salami, or, cook with it. Our Black Truffle Salami benefits from 11g of fat per 100g, and only 0.5g carbohydrates, and 0g fibre; a brilliant option for a ketogenic diet.
Kombucha, Ferments & Preserves
If you are considering following a keto diet, you may have also considered being good to your gut in other ways. Fermented vegetables are high in probiotics and are an excellent fuel for the good bacteria in your gut's natural microbiome. They also happen to be delicious alongside cured meats, so you might be on to a winner here. Kimchi, sauerkraut, preserved salad onions or potatoes, curtido and other fermented vegetables, relishes and sauces can add an extra freshness to a charcuterie sharing board or plate of cured meats. They are also aligned with a ketogenic diet.
